Mary "Kay" Carroll passed away peacefully Friday, November 18, 2022 surrounded by her family. Kay was a devoted mother and grandmother who loved to share in every moment of her children and grandkids' lives. She was loving, selfless, and always thinking of her family. Her goofy sense of humor as well as her love of the natural world was passed to her grandchildren who carry on her adventurous and tenacious spirit. Kay loved to travel and spoke 3 languages fluently. She was born in New Mexico, then lived in Northern Africa, Mallorca, as well as South America prior to moving to Minnesota where she married and raised her family. She earned a BA in Latin American Studies from the University of Florida and eventually dedicated her career to supporting spanish-speaking families through the school district. She is preceded in death by her parents, Dwight Smith and Joan Christine, and step-father, Richard J. Christine. Kay is survived by her children, Joanna (Nicholas) Griffith, David (Shannon) Carroll, Jennifer Carroll; sisters, Christi (Bob) Cimino, Edessa Carr; and grandchildren, Ryder, Mylo, Gavin, Danny, and Dylan. Services were held Wednesday, November 30th, 2022 at Starkson Family Life Celebration Chapel in Hastings, MN.
