Elizabeth (Edman) Doherty, 89, of Newington, CT passed away peacefully on December 3, 2025 with her loving family by her side. Born in New Britain, the daughter of Ernest and Clementine Edman, Betty moved to Newington at a young age. As a teenager and young adult, she helped her father manage the family farm, Edman's Dairy, often seen working in the barn and ice cream parlor.
She started her business career as a clerk at New Britain City Hall and for a short time as a teacher's aide at John Paterson School in Newington. Betty then went on to join the claims department of Amica Mutual Insurance Company in 1975. She worked there for more than 20 years and retired from the position of Senior Claim Service Representative Supervisor in 1999. Betty set an incredible example for her daughters with her dedication and strong work ethic.
During her retirement years, she enjoyed taking care of her three grandchildren. One of her greatest pleasures was spoiling them, as well as her daughters. In her spare time, Betty enjoyed cooking, reading, and Hallmark movies. She also enjoyed attending holiday and social gatherings with family and friends.
She leaves her daughter Lynne DeFusco and grandson Johnathan of Newington and daughter Kelly Doherty-Schaffner and her husband Patrick Schaffner and grandchildren Jack and Kaitlyn of Glastonbury as well as several cousins. Betty was pre-deceased by her parents Ernest and Clementine Edman and a brother, Arvid Edman all of Newington. She was also pre-deceased by her first husband, Jay Cole, Jr. and her second husband, John Doherty.
The Doherty family would like to extend their heartfelt thanks and gratitude to the staff of The Hospital of Central CT in particular the members of the Critical Care Unit for their expertise, care, kindness and compassion.
