Carole Persing Gobert, age 80, passed away on Friday, January 29, 2021 in Knoxville, TN. She was born in Altoona, Pennsylvania, daughter of the late Dr. Harry M. Persing Jr. and the late Dorothy Amelia White Persing. Carole is survived by daughter, Rachel DeLauder (Nathan); grandchildren, Carlissa Martin, Cristian DeLauder, and Ezikieal DeLauder; sister, Julie Papadimas (Stathis), and nephew, Demos Papadimas.
After receiving her Bachelor's and Master's degrees in Psychology from Cornell University, Carole made Knoxville her home. While living in Knoxville raising her daughter, Carole enjoyed working at the Law Office of JD Lee where there was never a dull moment. In her retirement, Carole volunteered countless hours at Young-Williams Animal Center. She also spent much of her time birding and enjoyed Fantasy Birding when she wasn't able to be walking in the parks, especially in her last days.
Carole enjoyed spending summers with family at their beach house on Long Beach Island, New Jersey, starting when she was a child and throughout her life. There she met many friends that would last a lifetime.
Carole found joy in watching her grandchildren at all their sporting events. She especially liked their baseball games. Carole had a love for animals like none other. She loved and nurtured many cats in her days, including fostering young kittens until they could be adopted. She also enjoyed reading, especially mystery novels.
A private service to celebrate Carole's life will be held later. In lieu of flowers the family requests donations be made in Carole's memory to Young-Williams Animal Center, 3201 Division Street, Knoxville, TN 37919, or an Audubon Society of your choice.
